[Salad with octopus and avocado]




·Ingredients
Octopus (steamed) approx.200g
Avocado (ripe and soft) 1piece  
Italian parsley as appropriate
(Sauce)
Garlic 1 piece
Milk as appropriate
Water as appropriate
Anchovy paste 2 small spoonfuls
Extra virgin olive oil 50cc
Salt and pepper

·How to cook

(1) Slice octopus 5mm thick.

(2) Cut avocado into two pieces, remove seed and peel.
Then, cut it as the figure shows.
(3) Cut Italian parsley into pieces.
(4) Put (1)to (3) into a large bowl and mix them well.
(5) Prepare sauce. Peel garlic, cut it into two pieces and take out the core.
Put the garlic into a small pan, add water to cover garlic halfway, add more milk to fully cover the garlic, and boil until garlic become soft. * By adding milk, the smell of garlic is gone and the sauce tastes elegant.
When the garlic has boiled, take out only the garlic and place in a bowl, mash into a paste with the back of spoon, add anchovy paste and extra virgin olive oil, and mix them thoroughly. Then move them into a small pan on a burner and when bubbles appear in the oil, mix them slightly and turn off the burner.
(6) While (5) is hot, add them into (4) and mix them so that the sauce goes over all the ingredients.
Add salt and pepper as appropriate.
